I created EKA with a mission to make it easier for people to stop and appreciate the little things in life, with customisable candles that celebrate what makes us unique.
DISCOVER MY STORYWith Christmas behind us, the countdown to the New Year has officially begun. We are only a few days away from New Year’s Eve 2018 so it’s time to start talking cocktails…..
The last thing you want to be stuck doing on NYE is mixing and making some super complicated drinks so we’ve compiled a list of 5 super easy and delicious cocktails that will wow your guests and see the New Year in on a high!
(per cocktail)

120ml cranberry juice
10ml lemon juice
Fresh cranberries

1 slice of lemon
2 tbsp. sugar
25ml Blue Curacao (available at most supermarkets!)
Champagne or Prosecco
Lemonade
Ribbon
Place sugar on a small shallow plate. Rim each champagne flute with a lemon wedge and dip in sugar. Add 25ml (one shot) of blue curacao in each glass. Fill halfway with bubbly, then top up with lemonade.
(per cocktail)
Juice of 1 Lime
Mint leaves
1 tablespoon sugar
2 tablespoons white rum
60ml coconut milk
Sparkling water
Pomegranate arils for serving
Ice
This is best to make in batches of 6 so in a bowl crush the lime juice, sugar and mint leaves together until the leaves have broken down. Fill the bowl half way with ice. Pop into a blender and combine with the white rum, and coconut milk and blend until smooth. Pour over extra ice and stir to combine. Top with sparkling water, mint and pomegranate.
(makes one pitcher)
1 bottle of red wine
1 bottle sparkling apple cider
2 clementines, sliced thin, peel on
2 granny smith apples, cored and diced
Pomegranate arils
1 cup cranberries sliced in half
Rosemary to garnish each glass
Mix wine, cider, and fruit in a large pitcher. Serve over ice and garnish with rosemary.
(makes 4)
4 tsp instant coffee
1/2 tsp couple of drops vanilla extract
2 tsp sugar
4 tbsp salted caramel sauce
100ml single cream
4 x rosemary sprigs to serve
Dissolve the coffee in 400ml boiling water. Stir in the vanilla extract and sugar until dissolved, then set aside to cool. When ready to serve, drizzle the salted caramel sauce down the sides of 4 glasses. Add a couple of ice cubes to each glass and carefully pour in the coffee. Divide the cream between the glasses (1-2 tbsp per glass) and lightly swirl together. Garnish with a rosemary sprig.
We hope you have a wonderful New Year celebration and please always remember to drink safely and responsibly.
